Vins Pirouettes, Espectacular de Théo 2019 is an Alsatian orange wine made from a co-fermented blend of Gewürztraminer, Pinot Gris, Riesling, and Muscat sourced from biodynamically farmed vineyards. The wine undergoes extended skin maceration (typically around 15–20 days) which imparts its amber hue, aromatic complexity, and structured tannins. Fermentation is spontaneous with indigenous yeasts, and the wine is neither fined nor filtered, with zero sulfur added at any stage of production. On the nose, it shows intense floral and citrus aromatics—orange peel, lychee, and jasmine—with a palate marked by phenolic grip, bright acidity, and a dry, mineral finish. It is part of the Les Vins Pirouettes project, a collaboration spearheaded by Christian Binner to support independent growers in Alsace who practice natural viticulture and low-intervention winemaking.
